50g蔓越莓切碎备用,蔓越莓一定要切得碎一些,否则后面切的时候不容易开裂,而且后面吃起来口感会更好;

150g黄油提前室温软化,软化到可以用手指在黄油上轻易的戳个洞,不要过度软化,否则烤的时候容易变形;

然后往软化好的黄油中加入80g糖粉,用打蛋器中速打发,打到黄油发白,这样能让做出来的蔓越莓饼干口感更加酥脆;

然后把准备好的25g鸡蛋液分2次加入,每加一次就用打蛋器低速充分打均匀,不要过度搅打,打发到黄油出现羽毛纹路状就可以了;

蛋液混合均匀之后加入200g低筋面粉,1g盐综合甜味,还有切碎的50g蔓越莓干,用刮刀翻拌均匀,从下往上翻拌,搅拌到没有粉状就可以了;

这时候的面团是比较松散的,然后把面团放在油纸或者保鲜膜上,给它整理成方形,用手整形的时候不要耽误太久,因为手的温度高,容易造成黄油融化;

整理好形状之后放入冰箱冷冻一小时以上,冷冻之后切片更方便,冷冻好之后给它切片,切成厚度大约是0.8厘米的薄片;

蔓越莓曲奇饼干的做法总结:
1、原材料:黄油150g、糖粉80g、盐1g、蛋液25g、蔓越莓50g、低筋面粉200g;
2、全蛋液一定要分次加入,否则容易造成水油分离;
3、蔓越莓也可以用其他干果代替,例如:葡萄干、蓝莓干;
4、烤曲奇饼干的温度不宜过高;
5、翻拌低筋面粉时不能太用力,容易出筋,会导致饼干不蓬松;
