叶儿粑是四川的一道名小吃,有的地方又叫猪儿粑。
糯米有健脾暖胃的作用,是比较好的保健食品,如果一次吃太多了,很容易消化不良,所以在吃的时候一定要适量。

叶儿粑
食材与配料:糯米粉1斤、面粉3两、猪肉馅儿、盐菜、葱花儿
做法步骤:
1.准备1斤糯米粉、3两面粉。

2.将糯米粉、面粉混合在一起。用冷水和面,少量多次地加入。

3.揉成光滑的面团,自然醒发30分钟。

4.准备馅儿料:猪肉馅儿里放入姜末、生抽、白胡椒粉、水淀粉、食盐少许,搅拌均匀,腌制15分钟。

5.新鲜粽叶淘洗干净,沥干水分。剪成大小合适的片。

6.炒馅儿料:锅里倒入一半植物油,一半猪油,下肉馅儿炒散,等肉馅儿变色后,放入盐菜一起翻炒,炒出盐菜的香味。

7.关火,倒入葱花,翻拌均匀。

8.炒好的馅料装进保鲜盒,放冰箱冷藏2个小时。

9.开始包叶儿粑,取一团面团,搓成圆形,再捏成碗状,中间放上馅儿料,稍微用勺子压实。再收口,搓成椭圆形。用粽叶包裹起来。

18.包好的叶儿粑放入蒸笼,水开上锅蒸15分钟即可。

做叶儿粑不能用纯糯米粉,必须要加一些面粉或者米粉,如果全是糯米粉,揉出的面团太软了,不容易成型。蒸好以后,容易黏住叶子。糯米粉和面粉比例:1斤糯米粉放3两面粉。
